Salt of the earth

When asked to harvest a natural salt lake thirty years ago for to stop a natural salt lake from mixing with the Murray-Darling river, Duncan Thompson came up with an idea which turned his life around. He and his wife now runs Sun Salt: where they harvest underwater salt water to create salt, not only for practical industries who use salt - but also for a gourmet food business!
 
He now runs the company with his wife, and the two of them are constantly experimenting with new flavours: like chilli salt!
